Easy Breakfast Scramble

3/4 cup of small red potatoes quartered
3 slices thickly sliced bacon, diced
5 eggs
1tblsp red pepper flakes
1/2 tsp each of cinnamon, oregano, onion salt, ground nutmeg, and powdered ginger
2 tblsps milk

Roasting Potatoes
Lightly oil a baking pan and pre-heat the oven to 350 degrees. Once the oven is preheated, add the potatoes to the sheet pan and bake 15-20 minutes or golden brown on the bottom (if halved instead bake for 25-30 mins).

The Skillet
In a skillet pre-heated to med-high heat, cut the strips of bacon into smaller pieces (loosely diced) and let cook until mostly done (should be orange in color). While the bacon is cooking add the eggs, pepper flakes, spices, and milk to a bowl and whisk until thoroughly combined.Then add the potatoes to the skillet. As the potatoes are finished and the bacon is thoroughly cooked, add in the egg mixture and sautee until fully cooked. If desired add cheese of choice liberally and cook until cheese melts. Serve alone or with toast/yogurt.
